Maximillian Petty
Executive Chef/Owner

Born and raised in the Seattle area, Maximillian’s professional career began as a prep and line cook in his eldest sister’s restaurant during high school. Though he tried to pull away from the kitchen multiple times as a young adult, Max’s natural talent consistently drew him back. Max worked at restaurants across the United States, including Creme Cafe & Lounge, King Estate Winery, and Olivia before returning to Seattle to open Eden Hill in 2015.

Since opening, Maximillian has earned national recognition, including three semi-finalist nominations from the James Beard Foundation for Rising Star Chef.

Maximillian lives in Queen Anne with his wife and two children.

Elizabeth Hughes
Chef de Cuisine

A Washington native, Elizabeth fell in love with cooking because it's hands on, creative, and challenging; something she never found in her university studies. Elizabeth's cooked with several Seattle institutions, including Tom Douglas Catering, Daniel's Broiler, and Cafe Juanita before joining the Eden Hill team. She lives in Eastlake.

Chauncey Arkfeld
Front of House Manager/Sommelier

An accomplished pianist, a graduate of California’s Pacific Conservatory of the Performing Arts, and an English major, Chauncey brings a story and production to the experience at Eden Hill Restaurant. Before joining the Eden Hill Restaurant team in 2015, Chauncey worked for the Herbfarm and Bistro Laurent. Chauncey lives in Queen Anne.

 

Sean Arakaki
Cook

Born and raised in Hilo, HI, Sean knew he wanted a career where he both work hard and play hard, which lead him to culinary arts. A graduate of Hawaii Community College's Culinary Arts program, Sean has worked at Canlis, The Rainier Club, and Hilo Bay Cafe before joining Eden Hill. Sean lives in Magnolia.

 

Gillian Diedrick
Server / Bartender

A Seattle native, Gillian's served at several restaurants across the country, including Dot's Charcuterie and Bistrot, Taylor Shellfish Oyster Bar, and Vestal. Gillian lives in Ballard with her husband.

 

Giulia Cole
Cook

Born in Houston and raised in Miami, Giulia moved in Bellevue in 2008 and fell in love with cooking through Newport High School's culinary arts program. She's previously worked for Miller's Guild, Harvest Vine, Molly Moon's Ice Cream, Brunswick & Hunt and Le Grand Bistro. She lives in Interbay.

Franco Magofna
Dishwasher/Prep cook

Raised in Graham, Franco decided to pursue the culinary arts after graduating high school in 2016. Before and after working with Eden Hill since 2016, Franco's worked in the Naka and Opus Co kitchens. He lives in West Seattle with his sister, brother-in-law, and nephew.
